I must admit: I'm one of those guys who go crazy over imported corned beef in PX shops. And Spam, too!
Guess it's because I grew up in a small fishing town where we thought freshly caught alimasag (crabs), tahong (mussels), halaan (clams), swahe (shrimps), and alupihang dagat/tatampal (no translation) were poor folks' food and just side dishes to the main stars of the table which could be fried chicken, spam, and corned beef.
The world has changed since then in gastronomic inclinations but my love for corned beef has not.
So this morning, gave myself a treat. Strip-opened a can and did it the old-fashioned way: sauteed in garlic and onions, then boiled with chopped potatos with some salt, sugar, and pepper to the consistency of a watery sloppy joe.
Plopped a ladle-full onto a mound of hot sinangag (garlic fried rice), then mixed it up so it looks like some petfood. In between mouthfuls, I'd sip my thick baraco coffee as I admired the serene foggy view of green hills and nearby woods.
Ahhhh, this is the life!
To cap off an already perfect morning, a Phil Cuckoo Dove perched on the tree just beyond my backyard. It was chased away by a White-breasted Woodswallow a bit later but, at least, it's a sign my favorite annual transient neighbors are finding their way back.

Hehe.... l like my corned beef stir-fried with onions and garlic too, Ding. But I think I'd like your corned beef (served any way) better, especially now that the Cuckoo-Doves are back. ;D

It's almost a staple here in our house, too! Sauteed in garlic, onions, tomatoes and diced potatoes served over garlic fried rice. yummy!! We have SPAM every now and then also.
And in my case, its a Scrub Jay chittering outside our window. ;D

I'd like it the same way, sauteed in garlic and onions but the diced potatos are mixed in and sauteed together. Paired with pancake topped with butter and energy giving raw honey, freshly squeezed from the combs ;D And of course shooting the Phil Cuckoo Dove with the howitzer in between mouthfuls ;D
